Animal butter, also known in Iran as Zagros butter or yellow butter, is an edible animal fat product made from cow's or sheep's milk. This local butter is one of the common cooking fats consumed in some parts of Iran, and the finest and most desirable type is produced in the Zagros region, which has a pleasant flavor and aroma and is highly nutritious. In the traditional preparation method, milk is turned into yogurt and then into buttermilk, and using a leather bag, its butter is obtained and boiled until it reaches full purity. Grazing of sheep flocks on aromatic plants in the high mountainous areas of Kermanshah gives this butter its unique smell and taste.
