Clarified butter, known in Iran as Zagrosi butter or yellow butter, is an edible animal fat product made from cow or sheep milk. This local butter is one of the commonly used oils in some parts of Iran, and the best and most desirable type is produced in the Zagros region, which has a pleasant taste and aroma and boasts high nutritional value.
In the traditional preparation method, the milk is first turned into yogurt and then into buttermilk. Using a skin bag, the butter is extracted and boiled until it reaches full purity. The taste and quality of the clarified butter largely depend on the diet and grazing of the livestock. Sheep herds grazing on aromatic plants in the high mountainous areas of Kermanshah impart a unique smell and flavor to this butter.
