Animal ghee, also known in Iran as Zagrosi oil or yellow oil, is an edible animal oil product made from cow or sheep milk. This local oil is one of the common cooking oils used in certain parts of Iran, and the best and most desirable type is produced in the Zagros region, known for its pleasant taste and aroma as well as its high nutritional value.
In the traditional preparation method, milk is turned into yogurt and then into doogh (a yogurt-based drink), and using a leather bag, the butter is extracted and boiled until fully purified. The taste and quality of animal ghee greatly depend on the feeding and grazing of the livestock. Grazing of sheep flocks on aromatic plants from the high mountainous areas of Kermanshah region gives this oil its unique scent and flavor.
