Animal ghee, also known in Iran as Zagros oil or yellow oil, is an edible animal-based fat product made from cow or sheep milk. This local oil is one of the commonly used oils in some parts of Iran, and the best and most desirable type is produced in the Zagros region, which has a pleasant taste and aroma and is highly nutritious.
In the traditional preparation method, milk is turned into yogurt and then into buttermilk, and using a skin bag, the butter is collected and boiled until it reaches full purity. Grazing of sheep herds on aromatic plants in the high mountainous areas of Kermanshah gives this oil its distinctive aroma and flavor.
